Sous Vide Butter-Poached Asparagus

Just a touch of butter is all it takes to enhance the divine flavor of sous vide asparagus.

 

Ingredients

  • 1 bunch green asparagus, trimmed
  • 3 tablespoons of unsalted butter
  • sea salt, to taste

Instructions

Preheat your sous vide water bath to 185 degrees Fahrenheit or 85 degrees Celsius. Seal the asparagus with butter and salt to a zipper-lock or vacuum seal bag and cook for 10 to 12 minutes. Once the sous vide asparagus is done, run it through an ice bath to stop the cooking process and ensure the stalks and tips stay tender yet still have the right amount of crunchiness to them. Serve on its own or as a side dish to a sous vide cooked salmon.

Sous Vide Garlic Parmesan Asparagus

With the right combination of seasonings, sous vide asparagus will become one of your favorite dishes.

 

Ingredients

  • 1 bunch green asparagus, trimmed
  • ¼ cup (60 grams) of unsalted butter, grated or diced
  • 3-4 peeled garlic cloves, pressed or finely chopped
  • sea salt, to taste
  • ¼ cup (60 grams) of grated or shaved Parmesan cheese

Instructions

Preheat your sous vide oven to 185 degrees Fahrenheit or 85 degrees Celsius. Place the asparagus in a zipper-lock or a plastic vacuum bag, and add sea salt, unsalted butter, and pressed garlic before sealing the bag. Cook in a hot water bath for 15 minutes to get perfectly cooked and flavorful dish. Serve on a plate with or without the liquid the asparagus cooked in, topped with Parmesan cheese.

Sous Vide Asparagus with Olive Oil

Drizzled with olive oil, sous vide asparagus has a sensational and full flavor.

Ingredients

  • 1 bunch green asparagus, trimmed
  • 2 to 3 tablespoons of olive oil
  • kosher salt, to taste
  • italian herb seasoning, to taste (optional)

Instructions

Preheat your sous vide cooker to 185 degrees Fahrenheit or 85 degrees Celsius. Take the trimmed and cleaned asparagus, drizzle it with oil and add seasoning. Plain salt will be more than enough to complement the vegetable’s natural flavor, but if you prefer, you can add dried herb seasoning for a more intense aroma. Place the seasoned asparagus in a ziplock-style bag or a plastic vacuum bag, ideally in one layer only (take two if you need more space) and cook for 12 to 15 minutes. Serve immediately after it’s cooked, or, if you want your sous vide asparagus to be a bit crispy on the outside, sear it on the grill or in a heated pan once you take it out of the bag.
