What to look for when buying a silicone spatula:

Size/shape: As we’ve mentioned, silicone spatulas come in a variety of shapes and sizes. The first thing to note when looking for one to suit your needs is the length of the handle. If you are using the spatula to flip eggs, pancakes or burgers on the barbecue, then you want the handle to be long enough to keep your hand away from the heat source. If you are using the spatula to fold or mix cake batter, then the length of the handle is less important and should mainly feel comfortable in your hand.

Once you have decided on the length of the handle, you need to consider the size of the head, the part that will come in contact with food. Silicone spatulas that have a small, narrow head are not suitable for flipping food and instead, are used mainly for baking, mixing, stirring and scraping batter from the sides of a bowl. Solid and slotted heads come in different sizes, usually small and large, and you can match it with the size of the pan or pans that you use on a regular basis. Larger sized food needs a bigger, solid head with soft edges so that it easily slips under the whole item so that the food doesn’t fall apart mid-turn.

Usage: What you intend to use the spatula for will determine, to an exent, which kind to purchase. As mentioned above, size will factor into it, but also what you are using it for. It’s not practical, or even possible, to flip a burger with a small-headed silicone spatula that is better suited to stirring batter. That’s why many home cooks often have more than one silicone spatula to handle different tasks.

Material: While all silicone spatulas are made of silicone, not all of them are of superior quality. Some people like to perform what’s called the “pinch” test. This means pinching and twisting a flat surface of the silicone spatula to see if white shows through. If it does, then it is not pure silicone and probably has fillers, so you may want to stay away from it. Instead, choose 100 percent silicone that is food-grade, BPA and lead free.

Silicone is very flexible and floppy, so most handles on these spatulas have a stainless steel core wrapped around with the silicone to make them heat resistant. However, the handles on some silicone spatulas are made from hard plastic.
