Bananas foster is an all-time great dessert, and sous vide takes it to the next level! You will first need to make a rum sauce (be sure to bring it to a boil as described in order to remove most the alcohol) to use with this meal.
Rum Sauce
2 Tbsp Dark Rum
4 Tbsp Butter
1 Tsp Vanilla
1/2 Cup Brown Sugar
Sous Vide Ingredients
2 Bananas
1 Tsp Cinnamon
(Optional) 1/4 Cup Chopped Pecans
1Preheat water bath to 145F/63C.
2Combine all the rum sauce ingredients into a sauce pan, boil for 2 minutes.
3Remove the sauce from heat and allow to start cooling down.
4Peel and cut up your bananas, then add cinnamon.
5Add bananas into your sous vide bag, then add ~3 Tbsp of your rum sauce and seal. Put the rest of the rum sauce into a container for later.
6Cook the bananas for 25 minutes.
7Remove the bananas from the bag and serve with vanilla ice cream when desired. You can cool or freeze the bananas, or eat them immediately.
8(Optional) Drip more rum sauce over your dessert or sear the bananas quickly with a kitchen torch for that 'something extra'.

Looks yummy!! Could plantains be used instead though?

Looks delicious and very easy to veganize by swapping out the butter for Earth Balance or Miyoko’s Butter.

Hi Anjelika,
We have not personally tried this recipe with plantains, however, if you do decide to try it with plantains, it won’t be as sweet as plantains have more of a mild taste and not as sweet.
