Red wine poached pears are elegantly delicious while also appearing as a work of art on your plate. And of course, sous vide makes poached pears a breeze. Simply combine all of the ingredients into a bag and cook for 45 minutes. Serve immediately from the bag with vanilla ice cream and you have a light, yet satisfying, romantic dessert for two.
2 Pears, Firm
2 Cups Dry Red Wine
1 Cup Sugar
1 Cinnamon Stick
3 Cloves
~4 Slices of Orange Peel (Roughly 2 - 3 Inches)
1 Tsp Vanilla Extract
1Preheat water bath to 178F.
2Carefully peel pears.
3Combine ingredients into a large Ziploc bag and use the water displacement method to submerge in your water bath.
4Cook for 45 minutes.
5(Optional) Drink a glass of wine; I mean, you have it uncorked...
6Carefully remove pears and either serve right from the bag or serve chilled, depending on preferences.
7(Optional) Add the wine mixture to a saucepan and simmer on medium for roughly 15 - 20 minutes, or until the liquid thickens.
8Serve with the wine syrup and vanilla ice cream.

Certainly the best poached pears I’ve ever had at home. We used quite firm Bartlett pears, a Wente Cabernet Sauvignon, and raw sugar. They were amazing. Thank you for the recipe!
