8 Eggs

½ Cup Shredded Cheddar Cheese

½ cup cottage cheese

¼ Tsp Salt

¼ Tsp Pepper

Other Breakfast Ingredients to Taste (Cooked Bacon/Sausage, Tomato, Mushrooms, Green Onions, etc)

1Preheat water bath to 172F.

2Blend eggs, cheddar cheese, cottage cheese, salt, and pepper until smooth. Milky foam will rise to the top.

3(Optional) Place any additional ingredients at the bottom of each jar, such as cooked bacon and sausage.

4Pour egg mixture into each jar, dividing evenly.

5Tighten canning jar lids using ONLY your fingertips, ensuring not to fully tighten as air must escape during the cooking process.

6Cook for 1 hour.

7Carefully remove from water bath using tongs and serve immediately (torch the top for added texture) or let chill on the counter until cool to touch (about 1 hour) followed by adding them to the refrigerator.

8Looking to reheat? Simply microwave the egg bites (without lids) for 30 seconds.

Sounds great! I’m assuming since the recipe calls for 8 eggs, I’ll need 8 jars. Correct? The recipe doesn’t say.
