Recipe: Sous Vide Bacon

It's hard to mess with perfection, but sous vide bacon straddles the line between crisp and melt-in-your-mouth ably. What's more, you can take advantage of sealing the bacon yourself by throwing in a few favourite herbs. After all, in the kitchen creativity is king.
- Prep: 10 mins
- Cook: 20 hrs
Ingredients
1 lb of thick-cut bacon
1 sprig rosemary (optional)
1 sprig thyme (optional)
Directions
Preparation
1Remove bacon from plastic packaging
2Place bacon and herbs in a vacuum sealable bag
3Seal until airtight
Cooking
1Preheat water bath to 145F
2Place vacuum sealed bag in water bath
3Cook overnight
4Carefully remove bacon from water bath
5Chill in an ice bath for 20 minutes or until cool
Searing
1Remove bacon from bag
2Preheat your pan at medium-high heat for a 1 to 2 minutes
3Add bacon, cook for 2 minutes
4Flip and cook an additional 15 seconds to colour the other side
5Remove, pat dry with paper towl and serve immediately

Mm!!!! Bacon!! Love this recipe cuz I hate crispy bacon. This was just perfect.
