Recipe: Sous Vide Baby Back Ribs

  • Yields: 4 half-rack servings

Ingredients

2 racks of baby back ribs

3 tbsp smoked paprika

3 tbsp brown sugar

1 tbsp oregano

1 tsp mustard powder

Directions

1Set your water bath to 165 degrees fahrenheit

2In a medium bowl combine the smoked paprika, brown sugar, oregano and mustard powder in a bowl.

3Using a sharp knife remove the membrain from the back of the ribs by working the knife along the bone, and using a paper towl to peel it away from the meat

4Split the 2 racks of ribs in half and rub the spice mix into the ribs, including the cut ends

5Cook for 6 hours, or up until 8

6When the ribs are done pat dry with paper towel and place in a 350 degree oven for 10 minutes - this will crisp up and sear the outside of the ribs

7Plate and serve with potato salad or coleslaw

I cooked it for 24 hrs and they are delicious. Eating without using fingertips they are so easy to remove from the bone. Usually I cooked 4 bags of ribs then I freezed them and when ready put back directly from the freezer to the bath at the same temperature for approximatly 1 hrs then finihing for 10 minutes in the oven and there is no difference
